This short course is designed for new or entry-level processing and products employees or allied industry personnel new to the processing industry. The NCPPA program will include topics on primary, secondary, further processing, meat chemistry, meat quality and defects, process improvement, formulating and products, and safety for about 1 day. This short-course will also include hands-on activities for 1.5 days at the Processing Plant in the Chicken Education Unit on Lake Wheeler Road and/or the Meat Lab at Schaub Hall on campus.
NCPPA will be capped at 30 participants due to limited space for hands-on activities. Register soon!

The 2025 Processing and Products Academy short course will include meetings from March 11-13 2025, at NCSU Campus PSI Building (840 Oval Dr, Raleigh, NC 27606)in Raleigh.
