This short course is designed for new or entry-level processing and products employees or allied industry personnel new to the processing industry. The NCPPA program will include topics on primary, secondary, further processing, meat chemistry, meat quality and defects, process improvement, formulating and products, and safety for 1.5 days. This short-course will also include hands-on activities for 1.5 days at the Processing Plant in the Chicken Education Unit on Lake Wheeler Road and/or the Meat Lab at Schaub Hall on campus.

NCPPA will be capped at 25 participants due to limited space for hands-on activities. Register soon!

The 2024 Processing and Products Academy short course will include meetings from March 5-7 2024, at the StateView Hotel in Raleigh. Guests making such reservations must identify themselves as members of the Group, NC Processing and Products Academy during March of 2024. All reservations must be accompanied by a first night room deposit or guaranteed with a major credit card. Each individual will be responsible for the sleeping room rates (including any tax) and incidental charges (e.g. room service, gift shop charges and in-room entertainment fees).
